For the Chicken

  • 2 lbsĀ boneless, skinless chicken breasts and/or thighs, trimmed and cut into 1½-inch pieces

  • ½ cupĀ all-purpose flour

  • 2 tbspĀ olive oil, divided

  • Kosher salt & freshly ground black pepper, to taste

For the Sauce

  • 2 tbspĀ butter

  • 2Ā large carrots, peeled and diced

  • 2Ā celery stalks, diced

  • 1Ā large onion, diced

  • 2Ā bay leaves

  • ½ tspĀ dried thyme

  • 2 clovesĀ garlic, minced

  • 5–6 cupsĀ chicken broth

  • ½ cupĀ heavy cream

  • 1½ cupsĀ frozen peas, thawed

For the Dumplings

  • 1½ cupsĀ all-purpose flour

  • 2 tspĀ baking powder

  • ½ tspĀ salt

  • ¾ cupĀ buttermilk

  • 2Ā eggs
