Oven Baked Crispy Cornmeal Catfish

Some foods bring back memories of family dinners, fish fries, and summer evenings at crowded tables. Catfish does exactly that for me. But back then, a catfish was usually someone who was standing next to a hot deep fryer, gently lowering fillets into the boiling oil, with a crowd of people standing around waiting. That alone might make your stomach growl.

I still love that old-school flavor but don’t always want the mess that goes with frying. That’s why this oven-baked version is a favorite. I had a couple of catfish fillets in the fridge one night and was looking for something simple. I grabbed some cornmeal, seasoning and an egg from the kitchen. Dinner was ready for the oven in minutes.

The catfish baked until the cornmeal crust was golden and crunchy. The fish was tender and flaky on the inside, and the outside had that familiar crunch that everyone loves. And the best part? I didn’t have to stand over a hot pan or get oil on myself. Just a baking sheet, a few ingredients and some patience.

When I pulled the catfish from the oven, it looked like the kind of meal that belonged next to coleslaw, baked beans, or a mound of crispy fries. That night everyone was eager to come to the table.The platter was soon gone.
