This is my go-to for winning some extra love from my man. He can’t resist when I cook this!
1. Preheat your oven to 350°F (175°C).
2. In a large skillet over medium heat, cook the ground beef, onion, and garlic until the beef is well browned and the onions are translucent.
3. Stir in the taco seasoning and water. Bring to a boil, reduce heat to low, and simmer for about 5 minutes until thickened.
4. Mix in the black beans, corn, and diced tomatoes with green chiles. Stir until all is well combined.
5. Combine the cooked pasta and beef mixture in a large mixing bowl. Add in the shredded cheese (save a handful for topping) and sour cream. Mix well until the pasta is evenly coated.
6. Transfer the mixture to a greased 9×13 inch baking dish. Sprinkle the remaining cheese on top.
7. Bake in preheated oven for 20 to 25 minutes until bubbly and the cheese is melted.
8. Let it sit for about 5 minutes before serving to let everything set up nicely.
