Whenever I see this dish, I say ‘Put this stuff in my belly now!’
Preheat your oven to 375°F (190°C).
In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until translucent and fragrant, about 3-4 minutes.
Add the ground beef to the skillet, breaking it apart with a wooden spoon. Season with salt, black pepper, and smoked paprika. Cook until the beef is browned and fully cooked through.
Sprinkle the flour over the beef mixture and stir well to combine. Gradually add the beef broth, stirring constantly to avoid lumps. Continue cooking until the mixture thickens into a gravy, then reduce heat to low and stir in the milk and sour cream. Simmer for another 5 minutes.
