🥐Light Yogurt Brioche

👩‍🍳 Preparation
Make the dough
In the bowl of a food processor (or by hand), combine: flour, yeast, sugar, yogurt, butter (or oil), beaten eggs, and milk.

Mix well.
Knead for about 10 minutes , until the mixture is smooth and homogeneous.

First rising
Cover the bowl with a clean cloth and let it rest for 1 hour and 30 minutes , until the dough has doubled in volume.

Shape the brioche
Gently deflate the dough, shape it into the desired shape (loaf, braid, or balls) and place it in a lightly buttered mold or lined with baking paper.

Second rising
Let it rise again for 2 hours in a warm place, away from drafts.

Baking:
Bake in a preheated oven at 220°C (425°F) for about 30 minutes .
If the surface tends to brown too quickly, cover with aluminum foil.

Cooling
Remove from the oven and let the brioche cool on a wire rack before serving.

Total leavening: approximately 3 hours and 30 minutes

Cooking time: 30 minutes

Total time: approximately 4 hours and 15 minutes
