4 cups mango, peeled and sliced
½ cup white sugar (adjust to taste depending on mango ripeness)

Preheat the oven to 400°F (200°C).
Prepare the pie pan:
Line a 9-inch pie dish with half of the pie pastry. Set aside.
Make the filling:
In a mixing bowl, combine:
Mango slices
Sugar
Cornstarch
Lemon juice
Cinnamon
Stir until the sugar dissolves and everything is evenly coated.
Assemble the pie:
Pour the mango filling into the prepared pie crust.
Dot the top with small chunks of butter.
Cover with the second crust.
Seal the edges and crimp as desired.
Cut several vent slits into the top crust.
Bake:
Place the pie in the oven and bake for about 45 minutes, or until:
The crust is golden brown
The filling is bubbling
Cool before serving:
Let the pie cool at room temperature to allow the filling to set.
