1. Preheat the Oven
Preheat oven to 170°C (340°F). Grease and flour the baking pan.
2. Prepare the Batter
In a large bowl, beat eggs and sugar until light and frothy. Add vegetable oil, yogurt, salt, and vanilla extract. Mix until combined.
3. Add Dry Ingredients
Sift in flour and baking powder. Gently fold into the mixture without overmixing.
4. Divide the Batter
Separate into two equal parts. Leave one plain. In the other, mix in cocoa powder and instant coffee dissolved in warm water.
5. Pour into the Pan
Pour the plain batter first, then the cocoa mixture on top for a two-tone effect.
6. Swirl and Decorate
Gently swirl batters with a skewer or knife. Sprinkle chocolate chips if desired.
7. Bake
Bake for 35–40 minutes or until a toothpick inserted in the center comes out clean.
8. Cool and Serve
Cool slightly in the pan, then transfer to a wire rack to cool completely before slicing.
