🍞 Golden Vanilla Mini Loaves

Ingredients:

  • 1¾ cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • ½ cup unsalted butter, softened
  • ¾ cup granulated sugar
  • 2 large eggs
  • 1 tsp pure vanilla extract
  • ¾ cup buttermilk (or milk + 1 tsp lemon juice/vinegar, let sit 5 minutes)

Instructions:

  1. Preheat oven to 350°F (175°C). Grease or line 6 mini loaf pans with parchment paper.
  2. Mix dry ingredients: In a bowl, whisk together flour, baking powder, baking soda, and salt.
  3. Cream butter & sugar: In a large bowl, beat softened butter and sugar until light and fluffy (about 3-4 minutes).
  4. Add eggs & vanilla: Beat in eggs one at a time, then mix in vanilla extract.
  5. Combine wet and dry: Alternately add the dry ingredients and buttermilk to the butter mixture, starting and ending with the dry ingredients. Mix just until combined — don’t overmix!
  6. Fill pans: Divide batter evenly among the mini loaf pans.
  7. Bake: Bake for about 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  8. Cool: Let loaves cool in pans for 10 minutes, then transfer to wire racks to cool completely.

Optional: Vanilla Glaze

  • 1 cup powdered sugar
  • 2-3 tbsp milk
  • ½ tsp vanilla extract

Mix glaze ingredients until smooth and drizzle over cooled loaves for a sweet finishing touch.
