Chocolate eclair cake

Chocolate Éclair Cake is a no-bake dessert that’s creamy, rich, and easy to prepare. It’s made with layers of graham crackers, vanilla pudding, whipped topping, and chocolate frosting  mimicking the flavors of a classic chocolate éclair pastry.

🍰 Chocolate Éclair Cake: Recipe & Method

Ingredients:

  • Graham crackers – 1 box (to form layers)

  • Instant vanilla pudding – 2 (3.4 oz) boxes

  • Cold milk – 3 cups

  • Cool Whip (whipped topping) – 1 tub (8 oz)

  • Chocolate frosting – 1 can (or homemade, see below)


Instructions:

Step 1: Prepare the Pudding Mixture

  • In a large bowl, whisk the instant vanilla pudding mix with cold milk for about 2 minutes until thickened.

  • Fold in the Cool Whip gently to create a light, fluffy mixture.

Step 2: Layer the Dessert

  • In a 9×13-inch baking dish, place a single layer of graham crackers.

  • Spread half of the pudding mixture over the crackers.

  • Add another layer of graham crackers, then the remaining pudding mixture.

  • Top with one final layer of graham crackers.

Step 3: Frosting the Top

  • Warm the chocolate frosting slightly (about 10–15 seconds in the microwave) to make it easier to spread.

  • Spread the frosting evenly over the top graham cracker layer.

Step 4: Chill

  • Cover the dish and refrigerate for at least 4 hours, preferably overnight. This softens the graham crackers into a cake-like texture.

Ingredients:

  • 1/4 cup cocoa powder

  • 1/4 cup milk

  • 1/2 cup (1 stick) butter

  • 2 cups powdered sugar

  • 1 tsp vanilla extract

Method:

  1. In a saucepan, melt butter with cocoa and milk.

  2. Bring to a boil, remove from heat, and whisk in powdered sugar and vanilla.

  3. Let it cool slightly before pouring over the top layer of the cake.
