French Onion Soup Recipe

Ingredients

  • 2 tbsp olive oil (plus more for brushing)

  • 2 tbsp unsalted butter

  • 1 kg yellow onions (about 6), thinly sliced

  • ½ tsp granulated sugar

  • 2 garlic cloves, chopped

  • ½ cup dry sherry, vermouth, or white wine

  • 8 cups beef stock

  • 1 bay leaf

  • 3 sprigs fresh thyme (or ¼ tsp dried thyme)

  • 1 ½ tbsp salt (divided, adjust to taste)

  • ½ tsp black pepper (or to taste)

  • 12 baguette slices

  • 8 oz Gruyere cheese, shredded (about 1 ½ cups)
