Mandarins in Paradise – Lightning-Fast Cake with Addictive Potential

Ingredients

For the sponge cake base (use a store-bought sponge cake base or make it yourself):

  • 3 eggs

  • 2 tbsp hot water

  • 125 g sugar

  • 1 packet vanilla sugar

  • 75 g flour

  • 75 g cornstarch

  • 2 tsp baking powder

For the cream topping:

  • 300 g whipping cream

  • 300 g sour cream (or crème fraîche / Schmand)

  • 2 packets instant pudding powder (e.g. “Paradise Cream” lemon flavor)

  • 2 cans of mandarins (drained)
