Mississippi Mud Cake

A decadent, crowd-pleasing dessert featuring a rich chocolate cake, a gooey marshmallow layer, and a smooth chocolate frosting.

Ingredients

For the Cake:

  • 2 large eggs

  • 1 cup whole or 2% milk

  • ½ cup sour cream

  • 1 cup vegetable oil

  • 1 tbsp vegetable oil (for greasing the pan)

  • 2 cups all-purpose flour

  • 1 cup packed light brown sugar

  • 1 cup granulated sugar

  • ½ cup Dutch-processed cocoa powder

  • 1½ tsp baking powder

  • 1 tsp baking soda

  • 1 tbsp vanilla extract

  • ½ tsp kosher salt

  • 1 (10 oz) bag mini marshmallows (about 4 cups)

For the Frosting:

  • 8 tbsp (1 stick) unsalted butter

  • ⅓ cup whole or 2% milk

  • ¼ cup Dutch-processed cocoa powder

  • 2 tsp vanilla extract

  • ¼ tsp kosher salt

  • 2½ cups powdered sugar
