Generously season pork chops with salt and pepper on both sides.
In a large, ovenproof skillet, heat olive oil over medium-high heat. Add pork chops and sear for 3 to 4 minutes per side, until golden brown.
In a small bowl, stir together maple syrup, Dijon mustard, cider vinegar, garlic powder, and smoked paprika.
Drizzle the maple glaze over the pork chops, making sure to coat them well.
Place the skillet in the oven and bake for 15 to 20 minutes, or until the chops reach an internal temperature of 145°F (63°C).
Remove from the oven and let rest for a few minutes before serving. Variations and Tips

For a spicier touch, add a pinch of cayenne pepper to the glaze. For a smokier flavor, try smoked maple syrup.
