Small onion, finely diced 1
Garlic cloves, minced 3
Stone ground or Dijon mustard 2 tablespoons
Smoked paprika ¼ teaspoon
Green cabbage, sliced and chopped 1 medium head
Kosher salt To taste

Instructions
1. Crisp the Bacon:
In a large skillet over medium heat, cook the bacon pieces until browned and crispy. Remove the bacon with a slotted spoon and place on a paper towel-lined plate. Reserve about 2 tablespoons of the rendered fat in the pan.
2. Sauté the Onion:
Add the diced onion to the pan with the bacon drippings. Cook for 2–3 minutes, or until softened and translucent.
3. Add Aromatics and Spices:
Stir in the minced garlic, mustard, smoked paprika, and a pinch of salt and pepper. Cook for another minute, stirring frequently, until fragrant.
4. Cook the Cabbage:
Add the chopped cabbage to the skillet. Stir well to coat the cabbage in the flavorful mixture. Continue to cook, stirring occasionally, for 12–15 minutes, or until the cabbage is soft and lightly browned.
5. Return Bacon to the Pan:
Add the cooked bacon back into the skillet and stir to combine. Let it cook for another minute so the flavors can meld together.
6. Serve:
Dish up the warm cabbage and bacon mixture as a side to your favorite main course—or enjoy it on its own!
