Comforting Stuffed Pepper Casserole
This hearty, one-pan casserole brings all the flavors of classic stuffed peppers—without the fuss. It’s simple, satisfying, and perfect for busy weeknights or relaxed weekend meals.

Ground beef 1 pound
Bell peppers (chopped) 2
Onion (finely chopped) 1
Garlic (minced) 3 cloves
Worcestershire sauce 1 tablespoon
Low-sodium beef broth 1 (15 oz) can
Diced tomatoes 1 (15 oz) can
Long-grain white rice (uncooked) 1 cup
Italian seasoning 1 tablespoon
Salt 1 teaspoon
Black pepper ½ teaspoon
Mozzarella cheese (shredded) ¾ cup
Cheddar cheese (shredded) ¾ cup

1. Brown the Beef:
In a large skillet, cook the ground beef over medium heat, breaking it into small pieces as it browns.
2. Add Peppers & Onion:
Once the beef is browned, stir in the chopped bell peppers and onion. Cook until the vegetables are softened, about 5–7 minutes.
3. Season the Mixture:
Add the minced garlic, Worcestershire sauce, beef broth, diced tomatoes, uncooked rice, Italian seasoning, salt, and pepper. Stir everything to combine.
4. Simmer:
Bring the mixture to a boil. Once boiling, reduce the heat to low, cover the pan, and let it simmer for 20 minutes or until the rice is fully cooked and tender.
5. Mix in Cheese:
When the rice is done, stir in half of the mozzarella and cheddar cheese until melted and creamy.
6. Top with Cheese:
Sprinkle the remaining cheese evenly over the top.
7. Melt the Topping:
Cover the skillet again and let the cheese melt. If your skillet is oven-safe, you can place it under the broiler for a couple of minutes to brown the top.
