My husband enjoyed every bit of this meal and gave it a 5-star rating! He insists I keep it just the way it is.

As someone who juggles a busy work schedule and a love for home-cooked meals, I find slow cooker recipes to be lifesavers. This cheesy chicken and potato casserole is one of those comforting dishes that feels like a warm hug after a long day. Originating from the heart of comfort food, this dish combines tender chicken, hearty potatoes, and a creamy cheese sauce that melds everything together beautifully. It’s perfect for those chilly Midwest evenings when you want something filling and delicious without spending hours in the kitchen.
This casserole pairs wonderfully with a simple green salad or steamed vegetables to balance out the richness of the cheese and potatoes. A side of crusty bread or dinner rolls is also a great addition to soak up any extra cheesy sauce. For a refreshing contrast, consider serving it with a light vinaigrette-dressed salad or a tangy coleslaw.

Slow Cooker Cheesy Chicken and Potato Casserole
Servings: 6

Ingredients
1.5 pounds boneless, skinless chicken breasts, cut into bite-sized pieces
4 cups potatoes, peeled and thinly sliced
1 cup chicken broth
1 cup heavy cream
2 cups shredded cheddar cheese
1 teaspoon garlic powder
1 teaspoon onion powder
Salt and pepper to taste
1/4 cup chopped chives or green onions
Directions
Place the sliced potatoes in the bottom of the slow cooker.
Layer the chicken pieces on top of the potatoes.
In a bowl, mix together the chicken broth, heavy cream, garlic powder, onion powder, salt, and pepper.
Pour the mixture over the chicken and potatoes in the slow cooker.
Sprinkle the shredded cheddar cheese evenly over the top.
Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is cooked through and the potatoes are tender.
Before serving, sprinkle chopped chives or green onions over the top for a pop of color and flavor.
Variations & Tips

For a bit of spice, add some diced jalapeños or a dash of cayenne pepper to the cheese sauce. You can also swap out the cheddar for a different cheese like Monterey Jack or Gruyere for a unique flavor twist. If you’re looking to add more veggies, consider layering in some sliced bell peppers or mushrooms with the potatoes. For a lighter version, use half-and-half instead of heavy cream and reduce the cheese by half.
