There’s something so comforting about a warm bowl of potato corn chowder, especially when the weather starts to cool down here in the Midwest. This recipe is a family favorite, combining the sweetness of corn with the savory goodness of bacon. It’s perfect for those busy days when you want to come home to a hearty meal that’s been simmering away in the slow cooker. This chowder is not only delicious but also a great way to bring everyone together at the dinner table.
This potato corn chowder pairs wonderfully with a fresh green salad or some crusty bread to soak up all the creamy goodness. You might also consider serving it with a side of steamed vegetables or a light fruit salad to balance out the richness of the chowder. And don’t forget a sprinkle of fresh herbs like chives or parsley on top for a pop of color and flavor.
Slow Cooker Potato Corn Chowder with Bacon
Servings: 6
Ingredients
4 slices of bacon, chopped
1 medium onion, diced
2 cloves garlic, minced
4 cups potatoes, peeled and diced
3 cups corn kernels (fresh, frozen, or canned)
4 cups chicken broth
1 cup heavy cream
Salt and pepper to taste
1 teaspoon dried thyme
1/2 teaspoon smoked paprika
2 tablespoons butter
Chopped chives for garnish (optional)
Directions
1. In a skillet over medium heat, cook the chopped bacon until crispy. Remove the bacon and set aside, leaving the drippings in the pan.
2. Add the diced onion and minced garlic to the skillet and sauté until the onion is translucent.
3. In the slow cooker, combine the sautéed onion and garlic, diced potatoes, corn kernels, chicken broth, thyme, and smoked paprika.
4. Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the potatoes are tender.
5. About 30 minutes before serving, add the heavy cream and butter to the slow cooker. Stir well and let it heat through.
6. Season with salt and pepper to taste.
7. Serve hot, garnished with crispy bacon and chopped chives if desired.
Variations & Tips
For a vegetarian version, simply omit the bacon and use vegetable broth instead of chicken broth. You can also add other vegetables like bell peppers or carrots for extra flavor and nutrition. If you have picky eaters, try blending a portion of the chowder for a smoother texture that might be more appealing. For a spicier kick, add a pinch of cayenne pepper or some diced jalapeños.
