Puff pastry

Ground meat

1 egg, salt (for filling)

Fresh parsley, chopped

2–3 cloves garlic, minced

1 onion, finely chopped

Ground black pepper, to taste

Butter (for sauce and sautéing)

Flour

Milk

Cheese (grated)

Salt

Pinch of nutmeg

Pinch of turmeric

1 egg yolk (for egg wash)

1 tablespoon milk (for egg wash)

Sesame seeds for topping

Preheat your oven to 200 °C (392 °F).

In a pan, melt a small knob of butter and sauté onion and garlic until fragrant.

Add the ground meat, season with salt and black pepper, and cook until browned. Stir in parsley and set aside to cool slightly.

In a separate saucepan, prepare the cheese sauce by melting butter, whisking in flour to form a roux, then gradually adding milk until smooth.

Stir in grated cheese, a pinch of nutmeg, turmeric, and salt to taste. Cook until thick and creamy.

Roll out the puff pastry sheets and cut them into squares or rectangles.

Place a spoonful of the meat filling in the center of each square, then add a small amount of cheese sauce on top.

Fold the pastry over the filling to form pockets, sealing the edges with a fork.

Brush the tops with egg yolk mixed with a little milk for a glossy finish.

Sprinkle sesame seeds on top.

Arrange on a baking tray lined with parchment paper and bake for about 25 minutes, or until golden brown and puffed.
