This is a salad that gets even better after a day in the refrigerator

Marinated Cucumbers, Onions, and Tomatoes
This refreshing salad is a summertime staple, combining crisp cucumbers, sharp onions, and juicy tomatoes in a simple tangy vinaigrette. It’s perfect as a side for grilled meats or a light, cooling dish on its own.

Ingredients
Ingredient Quantity
Cucumbers, peeled & sliced ¼” thick 3 medium
Onion, sliced into rings 1 medium
Tomatoes, cut into wedges 3 medium
Vinegar ½ cup
Sugar ¼ cup
Water 1 cup
Salt 2 teaspoons
Fresh coarse ground black pepper 1 teaspoon
Oil ¼ cup
Fresh mint, chopped (optional) 1 teaspoon
Instructions

1. Combine Ingredients
In a large bowl, add the sliced cucumbers, onion rings, and tomato wedges.

2. Add Dressing
Pour in the vinegar, sugar, water, salt, pepper, and oil. If you’re using mint, stir that in as well.

3. Toss & Marinate
Gently toss everything to ensure the vegetables are well-coated in the dressing.

4. Chill
Cover and refrigerate for at least 2 hours. This allows the flavors to fully develop and the vegetables to soak in the marinade.
