4 large eggs
½ cup granulated sugar
½ cup all-purpose flour
1 cup whole milk (or almond milk for a lighter option)
1 teaspoon vanilla extract
A pinch of salt
For Assembly
1 tablespoon unsalted butter, melted
Powdered sugar, for dusting (optional)
Instructions
Step 1: Preheat and Prep

If using frozen cherries, pat them dry with paper towels before pitting.

In a mixing bowl, toss the cherries with 1 tablespoon of sugar (if needed) to enhance their natural juices. Set aside.
Step 3: Make the Batter
In a blender or mixing bowl, whisk together the eggs, granulated sugar, flour, milk, vanilla extract, and a pinch of salt until smooth. The batter should be pourable but not too thin.
