Directions
1. Preheat your oven to 375°F (190°C) and line a baking dish with aluminum foil.
2. In a large bowl, combine the mashed potatoes, egg yolks, cheddar cheese, milk, melted butter, salt, pepper, and garlic powder. Mix until smooth and well combined.
3. In a separate bowl, beat the egg whites until stiff peaks form.
4. Gently fold the beaten egg whites into the potato mixture, being careful not to deflate the egg whites.
5. Pour the mixture into the prepared baking dish and smooth the top with a spatula.
6. Bake in the preheated oven for 25-30 minutes, or until the soufflé is puffed and golden brown on top.
7. Remove from the oven and sprinkle with chopped chives, if using. Serve immediately.
