A great way to use up leftovers! Divine taste!
1. Preheat your oven to 400°F (200°C). Grease a cupcake or muffin tin with cooking spray or a bit of oil/butter so your puffs won’t stick.
2. In a large mixing bowl, combine the mashed potatoes, the beaten egg, cheddar cheese, chives or green onions, garlic powder, and a good pinch of salt and pepper. Mix it up well to get a nice, homogenous mash-up.
3. Using an ice cream scoop or a spoon, evenly divide the mashed potato mixture into the prepared muffin cups. Sprinkle a generous pinch of Parmesan cheese on top of each puff for that golden cheesy crust we’re after.
4. Bake in the preheated oven for about 20 minutes or until they’re puffed up and the tops are turning that irresistible golden brown.
5. Let them cool for a few minutes in the pan—trust me, they come out easier that way. Then transfer your puffs to a serving plate and watch them disappear!
