Step 1: Marinate the Chicken
- In a large mixing bowl, combine the mayonnaise , grated Parmesan cheese , olive oil , Montreal chicken seasoning , garlic powder , Cajun seasoning , and smoked paprika . Mix well to create a smooth marinade.
- Add the bite-sized chicken pieces to the marinade, ensuring each piece is evenly coated. Cover the bowl with plastic wrap or transfer to a resealable plastic bag. Refrigerate for at least 30 minutes (or up to 4 hours for deeper flavor).
Step 2: Prepare the Baste
- In a small bowl, mix together the softened butter , chopped parsley , minced garlic , grated Parmesan cheese , garlic salt , and black pepper . Set aside until ready to use.
Step 3: Assemble the Skewers
- Thread the marinated chicken pieces onto the skewers, leaving a small space between each piece to ensure even cooking.
Step 4: Cook in the Air Fryer
- Preheat your air fryer to 375°F (190°C) for 3–5 minutes. Lightly spray the air fryer basket with nonstick cooking spray or brush with oil to prevent sticking.
- Place the skewers in the air fryer basket, making sure they don’t overlap. Work in batches if necessary to avoid overcrowding.
- Cook the chicken skewers for 8–10 minutes , flipping halfway through, until the chicken is golden brown, crispy on the outside, and reaches an internal temperature of 165°F (74°C) .
Step 5: Baste and Serve
- Once the skewers are cooked, brush them generously with the prepared garlic-Parmesan baste while they’re still hot. This will help the flavors meld and create a rich, glossy finish.
- Sprinkle additional grated Parmesan cheese over the skewers for extra flavor and presentation.
- Garnish with more chopped parsley if desired and serve immediately
