‘Amish New Year Feast’—this dish always reminds me of the Amish tradition of starting the year with good luck and good food!
1. Place the sliced onion and minced garlic at the bottom of the slow cooker.
2. Add the pork shoulder on top of the onions and garlic.
3. Sprinkle salt, pepper, and caraway seeds over the pork.
4. Pour the sauerkraut over the pork, spreading it evenly.
5. Add the apple juice or apple cider to the slow cooker.
6. Cover and cook on low for 8 to 10 hours, or until the pork is tender and easily shreds with a fork.
7. Once cooked, shred the pork with two forks and mix with the sauerkraut and onions.
8. Serve hot and enjoy!
