Directions
Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
Roll out the puff pastry on a lightly floured surface to smooth any folds and cut it into 12 equal squares.
Brush half of the squares with a thin layer of Dijon mustard.
Place a slice of ham and a generous sprinkle of shredded Gruyère cheese on each mustard-coated square.
Season with a pinch of salt, pepper, and a few fresh thyme leaves, if using.
Cover each filled square with another piece of pastry, sealing the edges by pressing down with a fork.
Brush the tops of the pastry squares with the beaten egg for a golden finish.
Bake in the preheated oven for 15-18 minutes, or until the pastry is puffed and golden brown.
Allow the pastries to cool slightly before serving.
Variations & Tips
For a twist, try using smoked turkey or chicken instead of ham. Substitute the Gruyère with another melting cheese like cheddar or mozzarella for different flavor profiles. For added depth, include caramelized onions or sautéed mushrooms with the filling. If you prefer a spicier kick, add a touch of cayenne pepper or some sliced jalapeños. For a vegetarian version, omit the ham and add spinach and roasted red peppers.
