Bacon Mushroom Swiss Cheese Meatloaf

Instructions:

  1. Prep & Preheat:
    • Preheat oven to 375°F (190°C).
    • Lightly grease a 9×5-inch loaf pan or line it with parchment paper.
  2. Sauté Veggies:
    • In a skillet over medium heat, cook the onions and mushrooms until softened (3–4 mins). Let cool slightly.
  3. Soak Breadcrumbs:
    • In a small bowl, mix breadcrumbs and milk. Let sit for 5 mins to absorb.
  4. Mix Meatloaf:
    • In a large bowl, combine ground beef, ground pork, soaked breadcrumbs, Parmesan, sautéed veggies, bacon, Swiss cheese, eggs, Worcestershire sauce, 1 tbsp ketchup, garlic powder, thyme, salt, and pepper.
    • Use hands or a spoon to mix just until combined (overmixing makes it dense).
  5. Shape & Top:
    • Transfer the mixture to the loaf pan, pressing gently.
    • Spread ½ cup ketchup evenly over the top.
  6. Bake:
    • Bake for 50–60 mins, or until the internal temperature reaches 160°F (71°C).
    • Optional: Broil for 2–3 mins at the end for a caramelized top.
  7. Rest & Serve:
    • Let meatloaf rest 10 mins before slicing. This keeps it juicy!
