Banana Peel & Rice Curry Recipe

 Instructions

 

1. Prepare Banana Peels

  • Peel bananas, keep the flesh aside for another use.

  • Soak peels in boiling salted water for 30 minutes.

  • Drain, then slice into thin strips.

2. Cook the Rice

  • Rinse rice thoroughly.

  • In a saucepan, mix rice with coconut milk and enough water to cover by 2 cm.

  • Bring to boil, then reduce heat and simmer until fluffy.

3. Make the Curry

  • Heat oil in a pan.

  • Toast cumin, turmeric, coriander for 1–2 minutes.

  • Add onion, garlic, ginger. Cook until soft.

  • Add banana peel strips and cook for 5 mins.

  • Pour in broth or water, cover and simmer until tender.

4. Serve

  • Fluff the rice.

  • Serve with banana peel curry.

  • Garnish with fresh coriander.
