Banana Peel & Rice Curry Recipe
Instructions
1. Prepare Banana Peels

Peel bananas, keep the flesh aside for another use.

Soak peels in boiling salted water for 30 minutes.

Drain, then slice into thin strips.
2. Cook the Rice

Rinse rice thoroughly.

In a saucepan, mix rice with coconut milk and enough water to cover by 2 cm.

Bring to boil, then reduce heat and simmer until fluffy.
3. Make the Curry

Heat oil in a pan.

Toast cumin, turmeric, coriander for 1–2 minutes.

Add onion, garlic, ginger. Cook until soft.

Add banana peel strips and cook for 5 mins.

Pour in broth or water, cover and simmer until tender.
4. Serve

Fluff the rice.

Serve with banana peel curry.

Garnish with fresh coriander.
