Preheat Oven:
Preheat your oven to 400°F (200°C). -
Roast the Cauliflower:
Toss the cauliflower florets with olive oil, salt, and black pepper. Spread evenly on a baking sheet and roast for 25–30 minutes until tender and lightly golden. -
Prepare the Cheese Sauce:
In a medium saucepan over medium heat, combine cheddar, Monterey Jack, cream cheese, and half-and-half. Stir continuously until the cheeses are fully melted and the sauce is smooth.
Add garlic powder, onion powder, paprika, and cayenne pepper (if using) and mix thoroughly. -
Combine & Bake:
Transfer the roasted cauliflower to a baking dish. Pour the cheese sauce over the top and gently toss to coat evenly.
Bake in the preheated oven for 15–20 minutes until bubbly and slightly golden on top. -
Serve:
Let cool slightly, then sprinkle with chopped fresh cilantro if desired. Serve warm.
