Instructions

  1. Preheat Oven:
    Preheat your oven to 400°F (200°C).

  2. Roast the Cauliflower:
    Toss the cauliflower florets with olive oil, salt, and black pepper. Spread evenly on a baking sheet and roast for 25–30 minutes until tender and lightly golden.

  3. Prepare the Cheese Sauce:
    In a medium saucepan over medium heat, combine cheddar, Monterey Jack, cream cheese, and half-and-half. Stir continuously until the cheeses are fully melted and the sauce is smooth.
    Add garlic powder, onion powder, paprika, and cayenne pepper (if using) and mix thoroughly.

  4. Combine & Bake:
    Transfer the roasted cauliflower to a baking dish. Pour the cheese sauce over the top and gently toss to coat evenly.
    Bake in the preheated oven for 15–20 minutes until bubbly and slightly golden on top.

  5. Serve:
    Let cool slightly, then sprinkle with chopped fresh cilantro if desired. Serve warm.
