🍩 Berliner Boules (Bomboloni) with Pastry Cream

Soft, golden doughnuts with a creamy vanilla custard filling — perfect for dessert or a special breakfast treat.


🧾 Ingredients

For the Doughnut Dough:

  • 500 g T45 or all-purpose flour

  • 65 g sugar

  • 170 ml milk (lukewarm, adjust slightly if needed)

  • 15 g fresh baker’s yeast (or 8 g dried yeast)

  • 2 egg yolks + 1 whole egg (approx. 96 g without shell)

  • 80 g unsalted butter, softened

For the Pastry Cream:

  • 500 ml whole milk

  • 5 egg yolks

  • 100 g caster sugar

  • 50 g wheat flour

  • ½ to 1 vanilla pod (split and scraped) or 1 tbsp + 1 tsp natural vanilla extract
