BEST SCALLOPED POTATOES EVER

1. Preheat Oven and Prepare Dish

Preheat your oven to 350°F (175°C). Lightly grease a 1-quart casserole dish.

2. Make the Roux

In a small saucepan over medium heat, melt the butter. Stir in the flour to form a smooth paste (roux) and cook for about 1 minute, stirring occasionally.

3. Create the Cheese Sauce

Gradually add the milk to the roux, whisking constantly to prevent lumps. Season with salt and cayenne pepper.

4. Cook the Sauce

Cook over low heat, whisking occasionally, until smooth, thickened, and just starting to boil.

5. Add Cheese to Sauce

Reduce heat to low and stir in 1 cup grated sharp cheddar cheese until melted and smooth.

6. Layer Potatoes and Sauce

Arrange half of the sliced potatoes evenly in the prepared dish. Pour half of the cheese sauce over them. Repeat with the remaining potatoes and sauce.

7. Top with Cheese and Paprika

Sprinkle the ½ cup grated cheese evenly on top. Lightly dust with paprika for color.

8. Bake

Bake uncovered for about 1 hour, or until the potatoes are tender and the top is golden and bubbly.

9. Cool and Serve

Let cool for a few minutes before serving. Enjoy this creamy, cheesy side dish with your favorite main course.
