Buttermilk Coconut Cake …like a fluffy little getaway on a tropical island

1. Preheat the oven:
Preheat the oven to 140°C (top/bottom heat). Lightly grease a baking sheet or line it with parchment paper.

2. Prepare the batter:
Place the eggs, sugar, buttermilk, flour, and baking powder in a large mixing bowl. Beat with a hand mixer until you have a smooth, airy batter.

3. Fill the baking sheet:
Spread the batter evenly onto the prepared baking sheet.

4. Prepare the topping:
Mix the shredded coconut and sugar, then sprinkle evenly over the batter.

5. Bake:
Bake the cake for about 30 minutes — it should be lightly golden. Use a toothpick to test doneness!

6. Add the cream:
Right after baking, pour the cold whipping cream evenly over the hot cake. The cream will slowly soak in and make the cake extra moist.

7. Cool and serve:
Let the cake cool completely, then cut into pieces and enjoy.

Enjoy your tropical treat! 🥥🍰
