Carrot and Orange Cake Without Flour or Sugar

  • 2 cups grated carrots (about 3 medium carrots)
  • 1 cup almond meal (finely ground almonds)
  • ½ cup honey or maple syrup (adjust sweetness to taste)
  • ¼ cup coconut oil, melted
  • 3 large eggs
  • Juice of 2 oranges (about ½ cup)
  • Zest of 1 orange
  • 1 tsp vanilla extract
  • 1 tsp baking powder (gluten-free if needed)
  • ½ tsp ground cinnamon
  • Pinch of salt

Optional Toppings:

  • Whipped coconut cream or dairy-free yogurt
  • Fresh orange slices
  • Chopped nuts (e.g., pecans or walnuts)

Instructions

Step 1: Preheat the Oven
