Cheesy Garlic Butter Mushroom Stuffed Chicken

Instructions

 

Step 1 – Prepare the Chicken
Butterfly each chicken breast by slicing horizontally to create a pocket (do not cut all the way through). Season both sides with salt and pepper.

Step 2 – Make the Filling
In a small bowl, combine chopped mushrooms, garlic, butter, and a pinch of salt and pepper. Mix well.

Step 3 – Stuff the Chicken
Spoon the mushroom mixture into the pockets and top with mozzarella. Press closed and secure with toothpicks.

Step 4 – Bake
Preheat oven to 375°F (190°C). Place the stuffed chicken on a greased baking dish or parchment-lined tray. Bake for 25–30 minutes, until the chicken reaches 165°F (74°C) and the cheese is melted.

Step 5 – Serve
Remove toothpicks, garnish with parsley, and serve hot.

For extra flavor and a golden crust, sear the chicken in a hot skillet with olive oil for 2–3 minutes per side before baking. This locks in moisture and adds color.
