Cook Time: 20 minutes
Total Time: 30 minutes

🧾 Ingredients:

  • 2 large chicken breasts (cut into bite-sized pieces)
  • Salt & pepper, to taste
  • 2 tbsp olive oil or butter
  • 4 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup heavy cream (or half-and-half for lighter)
  • 1 1/2 cups shredded mozzarella cheese (or a blend of mozzarella and cheddar)
  • 1/2 cup grated Parmesan cheese
  • 8 oz pasta (penne, rotini, or your favorite shape)
  • 1 tsp Italian seasoning or dried oregano
  • Optional: fresh parsley or basil for garnish

🔪 Instructions:

  1. Cook the pasta:
Boil pasta in salted water according to package directions until al dente. Drain and set aside.
  2. Cook the chicken:
Season chicken pieces with salt and pepper.
Heat olive oil or butter in a large skillet over medium-high heat.
Cook chicken until golden and cooked through, about 5-7 minutes. Remove from skillet and set aside.
  3. Make the garlic sauce:
In the same skillet, add minced garlic and sauté for 1 minute until fragrant.
Pour in chicken broth and heavy cream. Bring to a gentle simmer.
  4. Add cheeses & seasoning:
Stir in mozzarella, Parmesan, and Italian seasoning. Cook until cheese melts and sauce thickens slightly.
  5. Combine:
Add cooked chicken and pasta back into the skillet. Toss everything to coat well in the cheesy garlic sauce.
  6. Serve:
Garnish with fresh parsley or basil if desired. Serve hot!

Tips:

  • For extra veggies, toss in spinach, mushrooms, or sun-dried tomatoes.
  • Swap chicken for shrimp or tofu for variety.
  • Use gluten-free pasta if needed.
