Chicken doesn’t have to be boring. This recipe proves it!
Directions
Preheat your oven to 375°F (190°C).
Place the chicken breasts in a single layer in a baking dish.
In a medium bowl, combine the peanut butter, soy sauce, lime juice, honey, rice vinegar, minced garlic, grated ginger, and red pepper flakes (if using). Mix until smooth and well combined.
Pour the peanut sauce over the chicken breasts, making sure they are well coated.
Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the internal temperature reaches 165°F (74°C).
Once cooked, remove the chicken from the oven and let it rest for 5 minutes.
Garnish with chopped fresh cilantro and peanuts before serving. Enjoy!
Variations & Tips
If you’re out of chicken breasts, chicken thighs work wonderfully and stay extra juicy. You can also swap out the peanut butter for almond or cashew butter if you have allergies or simply prefer a different flavor. For a vegetarian twist, try using tofu or tempeh in place of the chicken. If you’re looking to cut down on prep time, marinate the chicken in the peanut sauce the night before—this really helps the flavors to meld together beautifully.
