Chicken Spinach & Mushroom Low-Carb Oven Dish High-Protein | Low-Carb | Diabetic-Friendly

Preheat oven to 375°F (190°C).
Lightly sauté the fresh spinach in a pan with a bit of olive oil until just wilted. Season with black pepper and herb & garlic seasoning.
In a baking dish, spread the sautéed spinach evenly across the bottom.
In a bowl, mix the green onion cream cheese with chicken broth until smooth and slightly thinned.
Place the thin-sliced chicken breasts on top of the spinach layer.
Scatter the mushrooms over the chicken.
Pour the cream cheese mixture evenly over the chicken and mushrooms.
Top with shredded mozzarella cheese generously.
Bake uncovered for about 30-35 minutes or until chicken is fully cooked and the top is golden brown and bubbly.
Let it rest for 5 minutes before serving.
