2 lbs beef chuck, cut into cubes
2 tbsp olive oil
4 slices bacon, diced
2 cups red wine (Burgundy preferred)
2 cups beef stock
1 tbsp tomato paste
2 cloves garlic, minced
1 onion, chopped
2 cups mushrooms, sliced
1 cup pearl onions, peeled
2 carrots, sliced
2 tbsp flour
2 sprigs thyme
1 bay leaf
