Instructions
Cook the Base
In a large pot, melt the butter over medium heat.
Add onions and garlic; sauté until soft and fragrant.
Add Potatoes & Broth
Stir in the diced potatoes and broth.
Bring to a boil, then reduce heat and simmer until potatoes are tender (about 15–20 minutes).
Thicken the Soup
In a small bowl, whisk flour with a bit of water to make a slurry.
Stir into the soup and let simmer until slightly thickened.
Blend & Cream
Use an immersion blender to puree until smooth (or leave some chunks for texture).
Stir in heavy cream and cheese (if using). Season with salt, pepper, and paprika.
Serve
Ladle into bowls and garnish with bacon, cheese, parsley, or chives.
Tip: Serve with crusty bread or garlic rolls for dipping — it makes the soup even more irresistible.
