Directions:
1. Season the salmon fillets with salt and pepper. Heat olive oil in a large skillet over medium heat and cook the salmon for 4-5 minutes on each side until golden. Remove from the skillet and set aside.
2. In the same skillet, melt the butter and add the mushrooms. Sauté for 3-4 minutes until softened.
3. Add minced garlic and cook for about 1 minute until fragrant.
4. Pour in the heavy cream and add Parmesan cheese, stirring until the sauce thickens.
5. Add Italian seasoning and red pepper flakes (if using). Stir in the spinach and cook until wilted, about 2 minutes.
6. Return the salmon to the skillet, spooning sauce over the fillets. Let simmer for 2-3 minutes until the salmon is heated through.
7. Serve warm with extra sauce spooned over the top.
