Creamy Tomato Soup
Instructions:
- Preheat the oven to 400°F (200°C). Slice the tomatoes in half and place them cut side up on a baking sheet. Drizzle with olive oil, season with salt and pepper, and roast in the oven for 25-30 minutes, until softened and caramelized.
- In a large pot or Dutch oven, heat butter or olive oil over medium heat. Add diced onion, carrot, and celery, sautéing until softened and translucent.
- Stir in minced garlic and cook for an additional minute until fragrant.
- Add the roasted tomatoes to the pot, along with vegetable or chicken broth. Bring to a simmer and let it cook for 15-20 minutes, allowing the flavors to meld together.
- Using an immersion blender or countertop blender, blend the soup until smooth and creamy. If desired, strain the soup through a fine-mesh sieve for an extra silky texture.
- Return the soup to the pot and stir in heavy cream, warming it gently over low heat. Season with salt and pepper to taste.
- Tear fresh basil leaves into the soup, reserving some for garnish.
- Ladle the Creamy Tomato Soup into bowls and garnish with a drizzle of extra virgin olive oil, a dollop of crème fraîche, and a sprinkle of fresh basil leaves.
- Serve hot and enjoy the comforting goodness of homemade Creamy Tomato Soup.
