Ingredients:
8 oz (225g) white chocolate, finely chopped
1½ cups (360ml) heavy cream, divided
2 large egg whites
¼ cup (50g) granulated sugar
½ teaspoon vanilla extract
Pinch of salt
Fresh berries, shaved white chocolate, or whipped cream for garnish (optional)

Melt the White Chocolate:
Place the finely chopped white chocolate in a heatproof bowl.
Melt the chocolate using a double boiler method: set the bowl over a pot of simmering water, ensuring the bottom of the bowl doesn’t touch the water. Stir until smooth. Alternatively, melt the chocolate in the microwave in 15-second intervals, stirring between each, until fully melted.
Once melted, set aside to cool slightly.
Whip the Cream:
In a chilled mixing bowl, pour 1 cup of heavy cream.
Using an electric mixer or whisk, whip the cream until stiff peaks form.
Cover and refrigerate the whipped cream while preparing the other components.
Prepare the Egg White Mixture:
In a clean mixing bowl, add the egg whites and a pinch of salt.
Beat the egg whites until soft peaks form.
Gradually add the granulated sugar, one tablespoon at a time, while continuing to beat.
Continue beating until stiff, glossy peaks are achieved.
Combine the Ingredients:
Gently fold the slightly cooled melted white chocolate into the whipped cream until well combined.
Add the egg white mixture to the white chocolate and cream mixture, folding gently to maintain the mousse’s light and airy texture.
Stir in the vanilla extract until evenly incorporated.
