Ingredient Notes:
Choose waxy potatoes (Yukon Gold, Charlotte) so they hold their shape during cooking and brown nicely without falling apart.
Smoked sausages (Montbéliard, Strasbourg, or smoked chipolatas) provide a typical smoky flavor; choose good quality butcher or artisanal sausages.
For cheese, comté or aged emmental gives a stronger flavor, while cheddar adds creaminess and character.
