Didn’t realize this was so easy to put together

1. In a large bowl, combine the soy sauce, rice vinegar, sesame oil, sugar substitute, minced garlic, and grated ginger. Whisk together until well mixed.
2. Add the sliced cucumbers to the bowl and toss to coat them evenly with the dressing.
3. Sprinkle the sesame seeds and sliced green onions over the top.
4. Season with salt to taste and toss again to combine.
5. Let the salad sit for at least 10 minutes in the refrigerator to allow the flavors to meld together before serving.
Variations & Tips
For a spicy kick, add a pinch of red pepper flakes or a few slices of fresh chili. You can also incorporate some thinly sliced bell peppers or carrots for added color and crunch. If you prefer a sweeter taste, adjust the amount of sugar substitute to your liking. For a more substantial salad, toss in some cooked shrimp or shredded chicken.
