Dorito Taco Salad

Instructions

  1. Brown the Beef: In a large skillet over medium-high heat, cook the ground beef until no pink remains, breaking it into small crumbles with a spoon. Drain off any excess grease. Return the beef to the skillet, add the taco seasoning and water, and simmer for 3-4 minutes until the sauce thickens. Set aside to cool.

  2. Prep the Veggies: While the beef cooks, chop the romaine lettuce, halve the cherry tomatoes, and thinly slice the red onion. If using, ensure the corn and black beans are rinsed and drained well.

  3. Make the Dressing: In a small bowl or measuring cup, whisk together the Catalina dressing and sour cream (or ranch) until smooth and creamy.

  4. Assemble the Salad: In a very large serving bowl, combine the chopped romaine, cooled taco beef, tomatoes, red onion, cheddar cheese, corn, and black beans. Toss gently to mix.

  5. The Final Touch: Right before serving, pour the creamy dressing over the salad and toss until everything is lightly and evenly coated. Sprinkle the crushed Doritos over the top and give it one final gentle toss to distribute the crunch.

  6. Serve & Enjoy: Dish it up immediately for the best texture—creamy, cool, savory, and wonderfully crunchy all in one bite!

Chef’s Tip: To keep your salad extra crisp, prepare the components ahead of time but store them separately in the fridge. Combine everything just moments before you’re ready to eat.
