In a large mixing bowl, combine the shredded cheddar cheese and softened cream cheese. Mix until well blended.
Add the mayonnaise and stir until the mixture is smooth and creamy.
Fold in the diced pimentos, crumbled bacon, chives, and parsley.
Season with garlic powder, smoked paprika, salt, and pepper. Mix until all ingredients are evenly distributed.
Transfer the spread to a serving dish or glass jar. Garnish with a sprig of fresh herbs and a few pieces of crispy bacon.
Chill in the refrigerator for at least one hour to allow the flavors to meld together.
Serve with crackers, bread, or vegetable sticks.
Variations & Tips
For a spicier version, add a pinch of cayenne pepper or a few dashes of hot sauce. If you prefer a smokier flavor, try using smoked cheddar cheese. You can also experiment with different herbs, such as rosemary or thyme, to suit your taste. For a lighter version, substitute Greek yogurt for the mayonnaise. This spread can also be made ahead of time and stored in the refrigerator for up to three days, making it a convenient option for entertaining.
