Every time I crave an easy and tasty meal, this is my go-to of choice
Cheesy Beef Enchiladas in Casserole Recipe:
Ingredients:
– 1 pound ground beef
– 1 small onion, diced
– 2 tablespoons olive oil
– 8 ounces shredded cheddar cheese
– 1 small can green chiles
– 1 jar salsa
– 1.5 small cans enchilada sauce
– 12 flour or corn tortillas

Instructions:
1. Preheat oven to 375°F (190°C) and grease a casserole dish.
2. In a skillet, heat olive oil and cook onion until translucent.
3. Add beef and cook until browned. Drain excess fat. Stir in green chiles, 1 cup cheese, and 1 can enchilada sauce and let it simmer briefly.
4. Put beef mixture inside tortillas and roll up. Place side by side into casserole dish. Make sure to put the tortilla seams down.
5. Pour 1/2 can of enchilada sauce and some salsa (to taste) over tortillas. Sprinkle more shredded cheese on top.
