Every time I make this, it vanishes almost instantly—everyone loves it!
Preheat your oven to 375°F (190°C).
In a mixing bowl, combine the softened cream cheese, shredded cheddar cheese, and crumbled bacon. Mix until well blended.
Carefully cut a pocket into each chicken breast. Be sure not to cut all the way through.
Stuff each chicken breast with the cream cheese mixture, securing edges with toothpicks if necessary.
In one bowl, place the flour mixed with garlic powder, onion powder, salt, and pepper. In another bowl, beat the eggs. In a third bowl, add the crushed Doritos.
Dredge each stuffed chicken breast first in the flour, then dip in the beaten eggs, and finally coat with the crushed Doritos, pressing lightly to adhere.
Place the chicken breasts in a lightly greased baking dish.
Bake in the preheated oven for 25-30 minutes or until the chicken is cooked through and the coating is crispy and golden.
Remove toothpicks before serving.
Variations & Tips
For a spicier kick, you might mix some chopped jalapeños into the cream cheese mixture. If you prefer a different cheese, Monterey Jack or pepper jack would add a nice touch. For a different flavor profile, try using barbecue-flavored chips instead of Doritos. Always feel free to adjust seasonings to suit your taste or experiment with different herbs like thyme or rosemary for an earthy touch.
