1 pound ground pork
2 medium potatoes, peeled and grated
1 small onion, finely chopped
2 cloves garlic, minced
1 egg
1/2 cup breadcrumbs
1/4 cup chopped fresh parsley
Salt and pepper to taste
1 cup breadcrumbs for coating
2 tablespoons olive oil
Directions
Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
In a large bowl, combine the ground pork, grated potatoes, chopped onion, minced garlic, egg, 1/2 cup breadcrumbs, chopped parsley, salt, and pepper. Mix until well combined.
Shape the mixture into patties, about 3 inches in diameter.
Place the remaining breadcrumbs in a shallow dish. Coat each patty in the breadcrumbs, pressing gently to adhere.
Arrange the patties on the prepared baking sheet. Drizzle the olive oil over the patties to help them crisp up in the oven.
Bake in the preheated oven for 25-30 minutes, or until the patties are golden brown and cooked through.

 

Remove from the oven and let them cool slightly before serving.
Variations & Tips
For a spicier version, add a teaspoon of chili flakes or a diced jalapeño to the mixture. You can also substitute ground chicken or turkey for the pork if you prefer a lighter option. For a gluten-free version, use gluten-free breadcrumbs. Adding a handful of grated cheese, such as cheddar or parmesan, to the mixture can add an extra layer of flavor. If you enjoy herbs, consider adding fresh thyme or rosemary for an aromatic twist.
