Step 1 – Heat the Oil
Warm the vegetable oil in a sauté pan or cast-iron skillet over medium-high heat.
Step 2 – Add Potatoes and Onions
Add the peeled potatoes (sliced or diced as you prefer) and thinly sliced onions. Season with salt, pepper, and any optional add-ins.
Step 3 – Cook to Perfection
Turn the mixture frequently and cook for 10–15 minutes until the potatoes are browned and tender, and the onions are soft. For a creamier texture, cover the skillet while cooking.
Step 4 – Drain and Garnish
Remove excess oil by draining on a paper towel-lined platter. Sprinkle with freshly chopped chives before serving.
