In a small bowl, mix together the softened butter, garlic powder, and dried parsley until everything is well combined and smooth.
Spread the garlic butter mixture evenly on one side of each slice of bread, making sure to cover all the way to the edges.
Flip two slices butter-side down and sprinkle half the cheese on each slice. Top with the remaining bread slices, butter-side up, to make two complete sandwiches.
Heat a large skillet over low heat and place both sandwiches in the pan. Cook for 4-5 minutes until the bottom is golden brown and crispy.
Carefully flip each sandwich with a spatula and cook for another 4-5 minutes until the second side is golden brown and the cheese is completely melted.
Remove from heat and serve right away while the cheese is still gooey and the bread is perfectly crispy.
